Easy Azuki Bean Burgers
These are the best easy vegan azuki bean burgers you will find. Hearty healthy and protein-packed it can be frozen and then oven-cooked from frozen. They can be served with all kinds of dips and sauces or as a filling for pittas, flatbreads, wraps, burger buns, or with your typical British Sunday lunch with boiled or roasted vegetables.
What makes them easy to make is that I used a jar of organic cooked beans which are ready to use and can be added to any other ingredient. You must try them out!

✅ 250g of azuki beans from Cal Valls
✅1 large carrot grated
✅1/2 tsp of salt
✅1/2 of red pepper
✅1 large onion
✅1/2 tsp of ground turmeric and black pepper powder
✅1/2 tsp of ground cumin powder
✅120g- 150g of chickpea flour ( depending on consistency)
✅1 flax egg

Flax Egg
- Start by preparing the flax egg. Add 1 tablespoon of ground flax seeds to 3 tablespoons of water at room temperature, mix well and let it sit for 15 minutes.
- Then chop the onion very finely and add it to a large bowl.
- Pour out the jar of cooked organic azuki beans with its juice.
- Peel and grate the carrot and chop the pepper and add them both to the bowl.
- Add the salt, flax egg, turmeric and cumin powder and mix well.
- Gradually work in the flour until you reach a thickish dough consistency.
- Take a fork and start squashing down the mixture. I do this because when I eat the burgers I like to taste the whole ingredients inside but alternatively, you can blend the mixture.
- Sprinkle the bread crumbs onto a plate and with your hands take a small golf ball-sized dollop of the mixture, roll it into a ball and squash it down into a burger. Wipe them through the breadcrumbs on both sides and set them aside.
- I baked mine for 15 minutes at 180 degrees, then turned off the heat and let them settle while still soaking up some of the oven heat.
Bake or Fry
I prefer to bake my burgers because I like the crunchiness of the chickpea flour but if you prefer to deep-fry them in hot oil they will be moist but would need to settle for one hour in the freezer before frying.
Freezing the burgers
At this stage, as seen in the image below, you can now freeze any burgers you wish not to cook. Place them in a suitable freezer container and they will keep in the freezer for up to 6 months.
To prevent them from sticking together, try placing a sheet of vegetable paper on each layer in the container.
