Even if you’re not a master chef, there is no need to worry, with just a few simple steps, you can transform ordinary apple slices and puff pastry into these gorgeous jaw-dropping floral delights. The best apples for puff pastry desserts  – Depending on what color you want your roses you can pick various apples. I usually like sweet bright red or pink Lady. For a green rose, the Granny Smith apples would be perfect. Also, you add a few berries to the cooked apple tarts.

Almond Flour – I sprinkle the pastry with finely sieved almond flour to add a subtle nutty flavor and a little extra nutrition. You can also substitute with ground hazelnuts, pistachios, or even oat flour.

Fresh or frozen Puff Pastry – Ready to make or thawed out puff pastry. You can buy it in most local supermarkets.

Confectioners sugar – Confectioners sugar or icing sugar, is used to sprinkle on top of the apple roses (optional). Sprinkle the cooled apple roses with sieved icing sugar. This will give them a beautiful fresh look.

Coconut oil I buy organic, cold-pressed, unrefined virgin coconut oil but you can substitute it with olive oil, avocado oil, almond oil, or ghee, depending on the dish. Each offers unique flavors and cooking benefits.

Strawberry jam – I use organic jams with fresh fruit and no added sugars. You can substitute with any organic jam made from fresh fruit and no added sugars, such as raspberry, blueberry, or apricot jam, for a similar natural sweetness and fruit flavor.

Almond flour is made with blanched peeled almonds – It has a lighter texture, color, and flavor.

Almond meal is made from raw unpeeled almonds – It has a sharp nutty flavor and is slightly thicker in texture.

  1. Lightly grease a muffin tray with melted coconut oil and preheat your oven to 180°C (350°F). Cut the lemon, squeeze out the juice, and mix it with melted coconut oil to coat the apple slices.
  2. Wash the apples, remove the cores, cut them into halves, then slice them thinly.
  3. Coat the slices with the lemon juice and coconut oil. Soften the apple slices by microwaving them for 3–5 minutes or steaming briefly, then keep them covered until ready to use.
  4. Roll out the puff pastry to less than 1/8-inch thickness, cut each pack into 10 rectangles, and spread strawberry jam along the center of each.

  1. Roll each pastry strip with the apple slices into a rose shape.
  2. Seal the end, and place each one in a greased muffin tray.
  3. Sprinkle over a small amount of confectioner sugar (totally optional, I do this solely for decoration)
  4. Place the tin directly on the middle shelf and bake it at 180°c for forty minutes until fully cooked.

Can I use frozen puff pastry?

Yes, you can, but let it freeze out before you use it.

How long ahead of time can I make these?

Usually two-three days but you can make them 3 months ahead and freeze them once they are thoroughly cooled. To reheat them, place the frozen apple roses back on a muffin tin and place them in a preheated oven at 180°c for 10 minutes until heated.

What is the ideal thickness for slicing apples in apple roses?

Slicing the apples thinly is crucial because it allows the slices to be pliable enough to roll up the rose easily without it breaking I would say the ideal thickness for slicing the apples is around 1/16 to 1/8 inch (1.5 to 3 mm). If you have a mandoline slicer, great as it can help you achieve uniform thickness in your apple slices. This ensures that all the slices will cook evenly.

Can I freeze the unbaked apple roses and bake them later?

Yes, you can freeze unbaked apple roses for later use. After assembling the roses, place them on a baking sheet lined with parchment paper, make sure they are not touching, freeze them until solid, then transfer them to an airtight container or freezer bag. When ready to bake, simply add a few minutes to the baking time.

What difference is there between basic coconut oil and cold-pressed coconut oil?

Cold-pressed coconut oil means no heat was used in its extraction.

How do I stop puff pastry from shrinking?

Chill the pastry for ten minutes before baking and avoid stretching it while rolling to prevent shrinking.

If a microwave isn’t available, you can steam or sauté the apple slices in a small amount of coconut oil, water, or vegan butter over medium heat. Cook them until they become flexible but not soft. Alternatively, you can add the apple slices to a pot of boiling water with a squirt of lemon juice and cook them for about 1 minute. DO NOT OVERCOOK, it will make the puff pastry soggy.

When arranging the apple slices on the puff pastry, overlap them consistently to create a smooth and continuous spiral. This helps in forming a tight rose shape.

To get flaky puff pastry every time, make sure the puff pastry is fully cooked on the inside before removing the roses from the oven! If after the first 30 minutes, the apples start to burn on top, move the muffin tin to a lower rack of the oven and finish baking. You can also cover loosely with aluminum foil for 10 minutes to avoid the apple roses burning on the top.

You can store these freshly baked delights in an air-tight container at room temperature for up to three days. Or in the refrigerator for up to three or four days. You can always warm them up for a few minutes by placing them in the oven before serving. They are better if served on the same day when they are warm and crisp.

  • Apple slices are too thick or thin, making them difficult to roll or prone to breaking—cut them evenly to about 1/8 inch thick.
  • Apples are not softened enough, leading to uneven baking or difficulty rolling—heat them until pliable before assembling.
  • The pastry is not rolled thin enough, which makes the roses bulky and undercooked—roll it to less than 1/8 inch for even baking.
  • Overfilling the pastry causes spills and unraveling, so use a thin layer of jam and evenly spaced apple slices.
  • The ends of the pastry aren’t sealed properly, causing the roses to unfurl during baking—press the edges firmly to secure.
  • A muffin tin isn’t greased sufficiently, making removal difficult—use coconut oil, plant-based butter, or non-stick spray.
  • Baking at the wrong temperature burns the tops, so bake at 180°C (350°F) on the middle rack for even cooking.
  • Removing roses from the tin too soon can cause them to fall apart—let them cool for 10 minutes first.

Ingredients   

  • 4 Medium bright red sweet red apples
  • 1 tablespoon of almond flour
  • 2 Packs of ready to use puff pastry rectangle or sqaure shaped
  • 1 tablespoon of confectioners sugar
  • 2 tablespoons of coconut oil cold pressed
  • 3 tablespoons of strawberry jam
  • 3 tablespons of fresh lemon juice roughly the juice of one small lemon

Instructions  

  • Lightly grease a muffin tray with melted coocnut oil. I made ten beautiful apple roses using two sheets of puff pastry. Preheat the oven to 180°c, lightly grease a muffin tray for 10 roses.
  • Cut the lemon in half, remove the seeds and squeeze out the juice.
  • Prepare the apples, wash them with their skins, and cut out the core with an apple corer, cut the apple in half and then cut thin slices (not too thin so they break when the apple is heated) Arrange them on a big plate and coat them with lemon juice and melted coconut oil.
  • If using a microwave, heat the apple slices on a microwave-safe plate for 3-5 minutes until softened, checking every 30 seconds. If you don't have a microwave, steam the slices for a few minutes and add the coconut oil and lemon juice after steaming so the apples absorb the flavor. Keep the plate covered with a kitchen towel until ready to use.
  • Roll out the SQUARE or RECTANGLE puff pastry sheets to less than 1/8-inch thickness. Use a pizza cutter or a sharp pointed knife to cut five rectangles. (see images below). NOTE: You can get 5 roses from each sheet of pastry. The pastry weight for each pack is approximately 260 grams.
  • Spread a thin layer of strawberry jam along the center of the pastry strip, covering it evenly. Sprinkle almond flour over the jam.
  • Arrange the apple slices slightly overlapping each other along the top edge of the pastry strip, with the slices slightly extending over the edge. Fold the bottom edge of the pastry strip up and over the base of the apple slices, as shown.
  • Starting from the end, carefully roll the dough, starting from one end, while keeping the apple slices in place. Seal the edge at the end by pressing with your finger. Do the same for all ten roses.
  • Place the rolled dough in a regular muffin cup. If using a silicone mold, there's no need to grease it. However, if using a different type of mold, make sure to grease it with coconut oil or plant-based butter (or use a cooking spray).
  • Place the tin directly on the middle shelf and bake it at 180°c for forty minutes until fully cooked. Turn off the heat and leave inside the oven for a further five minutes.
  • This step is completely optional, but if you’d like, you can dust the apple roses with confectioners' sugar just before baking. This adds a touch of sweetness to enhance their flavor and helps create a delicate caramelized glaze as they bake. It also gives the roses a more polished and visually appealing finish, making them look even prettier.
  • Once they come out of the oven, let the apple roses sit for 10 minutes before removing them from the tin. Transfer them to a cooling rack to finish cooling. If desired, once again sprinkle them with confectioners' sugar before serving. Enjoy your baked apple roses!
