Apples  – Depending on what color you want your roses you can pick a variety of apples. I usually like sweet bright red or pink Lady. For a green rose, the Granny Smith apples would be perfect. I like to use shiny bright red apples with glossy skin that makes the roses look spectacular.

Almond Flour – I give the pastry a sprinkle with finely sieved almond flour. This gives the roses a little nutty flavor and makes them even more delicious.

The difference between almond flour and almond meal – You have probably heard the two sayings: Almond flour is made with blanched peeled almonds. It has a lighter texture, color, and flavor. Almond meal is made from raw unpeeled almonds has a sharp nutty flavor and is slightly thicker in texture.

Fresh or frozen Puff Pastry – Ready to make or thawed out puff pastry. You can buy it in most local supermarkets.

Icing sugar – Also known as confectioners sugar or icing sugar, is used to sprinkle on top of the apple roses. Sprinkle the cooled apple roses with sieved icing sugar. This will give them a beautiful fresh look.

Coconut oil I buy organic, cold-pressed, unrefined virgin coconut oil in a glass jar. 

Strawberry jam – I use organic jams with fresh fruit and no added sugars. The jam I prefer is those from CalValls. I used strawberry jam for the roses.

Lemon Juice – I squirt freshly squeezed lemon juice.

Recommended Tools

Step-by-step instructions

Step 1: These impressive apple rosettes may seem challenging to create, but they’re actually quite simple. Preheat the oven to 180°C and lightly grease a muffin tray with your preferred oil. I used coconut oil. I made ten rose pies using puff pastry and dusted the tray with powdered sugar.

Step 2: To prepare the apples, wash them with their skins and cut them into thin slices after quartering. Coat them with melted coconut oil and lemon juice.

If using a microwave, place the slices on a microwave-safe plate, ensuring they are slightly separated, and microwave on high for 45-60 seconds until softened. If you don’t have a microwave, steam the slices for a few minutes and add the coconut oil and lemon juice afterward. Keep the plate covered with a kitchen towel until ready to use.

Step 3: Roll out the puff pastry sheets to less than 1/8-inch thickness. Use a pizza cutter or a sharp pointed knife to cut five rectangles. (see images below) Dust the pastry with powdered sugar. NOTE: You can get 5 roses from each sheet of pastry.

Step 4: Spread over a thin layer of strawberry jam or the jam of your choice, then sprinkle over the almond flour. Place the apple slices slightly overlapping each other and slightly over the top edge of the pastry sheets, (see image below). Then fold the bottom edge of the puff pastry sheet over the top of the apple slices, as pictured.


How to roll them into a rose

Step 5: Carefully roll the dough, starting from one end, while keeping the apple slices in place. Seal the edge at the end by pressing with your finger. Do the same for all 10 roses.

Step 6: Place the rolled dough in a regular muffin cup. If using a silicone mold, there’s no need to grease it. However, if using a different type of mold, make sure to grease it with butter and flour (or use a cooking spray).

Step 7: Place the tin directly on the middle shelf of the preheated oven and bake them at 180°c for 40 minutes until fully cooked.

NOTE: Make sure the puff pastry is fully cooked on the inside before removing the roses from the oven! If after the first 30 minutes, the apples start to burn on top, move the muffin tin to a lower rack of the oven and finish baking. You can also cover loosely with aluminum foil for 10 minutes to avoid the apple roses burning on the top.

Step 8: Let them sit for 10 minutes, remove the roses from the tin, and finish cooling them on the rack. Give them a sprinkle with confectioners’ sugar before serving. Enjoy your baked apple roses!

FAQs

Can I use a different type of fruit instead of apples for the roses?

While apples are commonly used for apple roses, you can experiment with other fruits like pears or peaches for a unique twist. Just make sure to adjust the preparation and baking time accordingly.

Can I use frozen puff pastry?

Yes, you can, but let it thoroughly freeze out before you use it.

How long ahead of time can I make these?

Usually 3 – 4 days but you can make them 3 months ahead and freeze them once they are thoroughly cooled and wrap them individually. To reheat them, place the frozen apple roses back on a muffin tin and place them in a preheated oven at 180°c for 10 minutes until heated.

What is the ideal thickness for slicing apples in apple roses?

Slicing the apples thinly is crucial because it allows the slices to be pliable enough to roll up the rose easily without it breaking I would say the ideal thickness for slicing the apples is around 1/16 to 1/8 inch (1.5 to 3 mm). A mandoline slicer can help you achieve uniform thickness in your apple slices. This ensures that all the slices will cook evenly.

Can I freeze the unbaked apple roses and bake them later?

Yes, you can freeze unbaked apple roses for later use. After assembling the roses, place them on a baking sheet lined with parchment paper, make sure they are not touching, freeze them until solid, then transfer them to an airtight container or freezer bag. When ready to bake, simply add a few minutes to the baking time.

Top Tips for achieving a perfect rose shape with the puff pastry?

If a microwave isn’t available, you can sauté apple slices in a small amount of coconut oil or vegan butter over medium heat. Cook them until they become flexible but not soft, approximately 20 seconds per side. Alternatively, you can add the apple slices to a pot of boiling water with a squirt of lemon juice and cook them for about 1 minute.

When arranging the apple slices on the puff pastry, overlap them consistently to create a smooth and continuous spiral. This helps in forming a tight rose shape.

Start by rolling the puff pastry and apple slices from one end tightly. The initial tight roll helps establish the core of the rose. Once you’ve reached the end of the puff pastry strip, seal it properly to prevent the rose from unraveling during baking. You can use a little water, milk, or wet flour wash to help seal the end.

Substitutions and Variations

You can swap the strawberry jam for another flavor of jam like a blackberry, apricot, peach, or raspberry.

Almond flour is not 100 percent necessary, I like the taste of the almonds and the crunchiness they give the rose, but by all means it is not essential and the rose can be made perfectly without it. You can substitute the almond flour for oat flour, coconut flour, or even ground nuts of your preference.

Storage Tips

You can store these freshly baked delights in an air-tight container at room temperature for up to two days. Or in the refrigerator for up to three or four days. You can always warm them up for a few minutes by placing them in the oven before serving. They are better if served on the same day when they are warm and crisp.

Equipment

Ingredients  

  • 3 sweet red apples
  • 2 table spoons of almond flour
  • 1-2 packs of ready to use puff pastry
  • 2 table spoons of icing sugar
  • 2 table spoons of coconut oil
  • 3 table spoons of strawberry jam
  • The juice of a fresh lemon.

Instructions 

  • Preheat the oven to 180°c, lightly grease a muffin tray for 10 roses and dust it over with powdered sugar.
  • Wash the apples. leave on their skins, cut them into quarters and thinly slice them.
  • Place the apple slices on a flat plate, suitable for microwaves and coat them with melted coconut oil and lemon juice. Pop them in the microwave for 3 to 4 minutes until they have softened. NOTE: If you don’t have a microwave you can steam them for a couple of minutes and add the coconut oil and lemon juice after steaming.
  • Roll out the puff pastry sheets to less than 1/8-inch thickness. Use a pizza cutter or a sharp pointed knife to cut five rectangles. Dust the pastry with powdered sugar. NOTE: You can get 5 roses from each sheet of pastry.
  • Spread over a thin layer of strawberry jam, then sprinkle over the almond flour.
  • Place the apple slices slightly overlapping each other and slightly over the top edge of the pastry sheets, (see images below). Then fold the bottom edge of the puff pastry sheet over the top of the apple slices, as pictured.
  • Starting from one end, roll the pastry but not too tightly to form a beautiful rose shape. Seal with the end of the dough strip. Do this with all ten of the apple roses.
  • Transfer the roses to the prepared muffin tin. Sprinkle with a little more powdered sugar.
  • Place the tin directly in the middle shelf of the preheated oven and bake them at 180°c for 40 minutes. If you notice the apple start to burn at the top, you can loosly cover them with alumium foil.
  • Take them out of the oven and let them sit for 10 minutes, remove the roses from the tin, and finish cooling them on the rack. Give them a sprinkle with sieved icing sugar. Enjoy your baked apple roses while they are warm and crisp!

Notes & Suggestions

Powdered sugar – Also known as confectioners sugar or icing sugar, is used to sprinkle on top of the apple roses.
Apples – Depending on what color you want your roses you can pick a variety of apples. I usually like sweet bright red or pink Lady. For a green rose, the Granny Smith apples would be perfect.
Puff Pastry – You can use frozen or fresh puff pastry from the local store or you can make your own pastry.
The roses can be stored in an air-tight container for three days. You can also refrigerate them for four days. These also freeze wonderfully. Simply wrap them in a sheet of parchment paper,  cover them with plastic wrap, and pop them in the freezer.
