Made with just 5 ingredients, these pretty no-bake vegan white chocolate strawberry quinoa bites are a colourful, gluten-free, crunchy treat that can be eaten straight from the fridge, or saved for sharing.
1 Mixing Bowl - If stainless steel, it can be placed in a bigger saucepan to create a double boiler.
Ingredients
1¾cupsVegan white chocolate300 grams. Has a touch of vanilla (optional: if your chocolate doesn`t have vanilla, add 1 teaspoon of vanilla essence)
⅓cupcashew butter100 grams
1½cupsorganic puffed quinoa50 grams (it is a very light ingredient)
1½cupsfreezer-dried strawberries60 grams ( mix in 50 grams+10 grams to decorate)
1½cupsmini vegan marshmallows60 grams ( mix in 50 grams+10 grams to decorate)

Instructions
Chop the vegan white chocolate into small pieces so it melts evenly.
Add the chocolate and cashew butter to a heatproof bowl and place it over a saucepan of gently simmering water, making sure the base of the bowl does not touch the water. Melt slowly using the double boiler method, stirring regularly.
Stir in the cashew butter and continue sriring. This should take about 5 minutes, until smooth and glossy.
Remove the bowl from the heat and immediately stir in the puffed quinoa, freeze-dried strawberries, and vegan marshmallows. Mix thoroughly so everything is evenly coated in the melted chocolate mixture.
Line a suitable freezer-safe tray with parchment paper. I used a Pyrex glass tray, but any similar dish will work.
Transfer the mixture into the tray and press it down gently with the back of a spoon to create an even layer.
If you like, decorate the top with extra crushed strawberries or a few marshmallows for a pretty finish.
Place the tray in the freezer for 1 hour, or until fully set.
Once firm, lift the slab out using the parchment paper and cut into square bites.
Store in the fridge or freezer until ready to serve.
Notes & Suggestions
The recipe makes 12 white chocolate quinoa bites; they are roughly 3cm x 3 cm square, but you can certainly cut them smaller or bigger. Do remember that if you adjust the size, the nutritional value for each quinoa bite will vary.
If you toast the puffed quinoa in a pan for 2-3 minutes on medium heat, it will bring out that nutty flavor. Toss and stir constantly to prevent burning.
White chocolate burns easily, so keep the heat low and make sure the bowl doesn’t touch the simmering water. Stir continuously.
Freeze-dried strawberries work best because they can be crushed and sprinkled on the top to make it look prettier. Fresh strawberries bring too much moisture for this recipe.
IIngredient Notes and SubstitutionsVegan White ChocolateI used a vegan white chocolate bar with a lovely touch of vanilla that was given to me as a gift. If you don’t have one, you can make your own or use your favourite brand.Puffed quinoaThis adds the crunch to these bites and is naturally gluten-free. You can swap for puffed quinoa or amaranth, or rice crispies if you like, but quinoa keeps it slightly more nutritious and gives that airy, crispy texture.Cashew butterSmooth, creamy cashew butter works beautifully here. You could use almond or peanut butter if you prefer, just be aware that it will subtly change the flavour. If you have the time, you can make your own.Freezer-dried strawberriesStore-bought freeze-dried strawberries are just as tasty and nutritious as fresh ones, but with the bonus of a long shelf life. They give a concentrated fruity flavour and pretty pink flecks without adding extra moisture.Vegan marshmallowsI used small pink and white store-bought marshmallows for fun. You could also make your own at home. I haven’t tried it yet, but it’s definitely something I want to experiment with in the future!
