Notes on ingredients

I always buy organic oranges, apples, and lemons if I plan on eating the skin or using the skin in any recipe.

You could alternatively use brown sugar if you don’t have coconut sugar.

I use plain white flour as a third of the flour ingredients. This helps the pastry be more rollable.

You can use crushed cloves or ground cloves. Either is suitable for this recipe.

How to make summary

You can find a complete list of step-by-step instructions in the RECIPE CARD below.

First, prepare the pastry, pre-cook it, and set it aside. Make the mincemeat following the instructions in the recipe card below. Fill the pies and cover or partly cover with the remaining pastry. Finally, bake them for a further 35 minutes.

  • Large Saucepan
  • Mince pie tray or muffin tin (I used a muffin tin so the pies were a little deeper in size)
  • Cookie Cutter

Frequently Asked Questions (FAQ)

What is Vegan Shortcrust Pastry?

This moist, and crispy vegan pie pastry will just melt and crumble in your mouth. This vegan shortcrust pastry is also suitable for sweet or savory pies, tarts, and quiches.

Shortcrustโ€ refers to the baking term โ€œshortโ€. This means that there is a high proportion of fat in flour and very minimal gluten development, therefore it doesn`t contain a raising agent to make it rise and expand during baking. It is a little different compared to the basic flaky crust, it is much more tender, lighter, and crispier. The vegan pastry replaces butter with vegan butter, margarine, or coconut oil.

What is Vegan Mincemeat?

Mincemeat is a combination of chopped dried fruits, spices, sugar or sweetener, nuts, distilled spirits (optional), and a fat of some type. You can buy this from a local store ready-made to use or make your own like most things, but there is nothing that can beat homemade, and with mincemeat, there is a big difference!

Vegan mincemeat is most typically used in “mince pies” or it can be used as a jam alternative and topped on toast or pancakes.

How to store the prepared minced meat?

You can then preserve the remaining mixture in sterilized jars. This mixture will be stored in the refrigerator for several weeks and can be frozen for up to three months.

Can I use store-bought mincemeat?

Absolutely, there are many brands out there, unfortunately not vegan this is why I make my own. This is a great idea if you don`t have as much time.

  • 200 g of whole wheat flour
  • 100 g of spelt flour
  • 100 g of organic all-purpose flour for the pastry to be rollable
  • 150 g of vegan butter or margarine
  • 100 g of coconut oil
  • 3 table spoons of rice syrup
  • ๐Ÿ…•๐Ÿ…˜๐Ÿ…›๐Ÿ…›๐Ÿ…˜๐Ÿ…๐Ÿ…–
  • 200 g of raisins
  • 200 g of currants
  • 100 g of candied peel
  • 160 g of coconut oil
  • 1 lemon with skin & pulp crushed
  • 1 orange with skin and pulp crushed
  • An apple finely chopped cored and unpeeled
  • 1/2 tea spoon of nutmeg
  • 100 g of coconut sugar
  • 1 table spoons of apple cider vinegar
  • 1 table spoons of crushed cloves

  • You can make the shortcrust pastry in just a couple of easy steps either by using a food processor or mixing the dough with your hands.
  • Pre-grease the mince pie or muffin tray with melted coconut oil and set aside for later.
  • Mix the flour, salt, rice syrup butter or oil in a food processor or a bowl if you donโ€™t have a food processor.
  • Gradually mix until the vegan pastry dough has enough moisture to come together.
  • Roll out carefully making sure it is not too thin else it might start to crumble. It should be around 2 or 3 inches thick all around.
  • Using the cookie cutter or a round biscuit cutter, cut out the crust bases and gently place them in the pre-greased tray.
  • Prick the bottom of all the pies with a fork so you donโ€™t get any bubbles when they are baked.
  • Bake in a preheated oven for 15 minutes at 180 degrees, and leave aside to cool.
  • How to make vegan mincemeat:
  • In a large saucepan on low heat, warm the apple cider vinegar and gradually add the coconut sugar followed by the coconut oil.
  • Wash and core the apples and grate them, and add them to the saucepan.
  • Add the crushed lemon and orange skins and pulps and stir well.
  • Add the candied peel, nuts and raisins and all the spices and give it a good stir.
  • Bring it to a boil and then reduce the heat and simmer uncovered for about 2 hours stirring the mixture occasionally. If the liquid reduces too soon add a little juice or water, especially at the end of the simmering,
  • Bring back the pre-cooked pastry pies and start filling the pies with the fruit mixture. Prepare some little lids or stars with the leftover shortcrust pastry and cover or partially cover the pies.
  • You can then preserve the remaining mixture in sterilized jars. This will mixture will store in the refrigerator for several weeks and can be frozen for up to three months.
  • Then you can just pop them into the oven for a further 20 minutes at 180 degrees. Take them out of the oven and let them cool down before eating them.
